2 1/3 C | Soft White Awakened Grains Wheat Flour |
3/4 C + 1 tsb | Vegetable Shortening |
1 C | Sugar |
1/2 tsp | Salt |
2 tsp | Baking Soda |
1 | Egg (large) |
1/3 C | Molasses |
2 tsp | Ginger (ground) |
1 tsp | Cinnamon (ground) |
1/2 tsp | Clove (ground) |
1/8 tsp | Cardamom (ground) |
1/2 tsp | Candied Ginger (finely minced) - optional |
1/2 C | Sugar (dusting) |
Preparation
- Preheat oven to 375°F
- In a small bowl, whisk together flour, salt, baking soda, and spices. Set aside.
- In large mixing bowl, beat in a stand mixer or by hand mixer, shortening and sugar until well combined.
- Add egg and molasses, beating until blended.
- Add flour mixture in two additions, beating after each until smooth.
- Scoop dough and roll into 1-inch balls. Toss in small bowl of sugar to coat.
- Place on a parchment lined baking sheet, 2 inches apart.
- Bake for 11-13 minutes until firm. Cool on rack. Store in airtight container.
